Ginger Bread Sandwich Trees

Ingredients

  • 3/4 Cup Butter (soft)
  • 1 Cup Packed Brown Sugar
  • 1 Egg
  • 3/4 Cup Molasses
  • 4 Cups Flour
  • 3 Tsp Pumpkin Pie Spice
  • 1 1/2 Tsp Baking Soda
  • 1 1/4 Tsp Ground Ginger
  • 1/4 Tsp Salt
  • M&M Minis Baking Bits
  • 3/4 Cup Vanilla Frosting
  • 1/4 Cup Confectioner Sugar
  • Green Food Coloring

Directions

  1. In a large bowl, cream butter and brown sugar until light and fluffy.

  2. Add egg and molasses.

  3. Combine flour, pumpkin spice, baking soda, ginger and salt.

  4. Gradually add to creamed mixture and mix well.

  5. Cover and refrigerate for 2 hours or until firm.

  6. On a lightly floured surface roll dough to 1/8 inch thickness.

  7. Cut with floured 3 inch tree shaped cookie cutter. Place 2 inch apart on ungreased baking pan.

  8. Press baking bits into half cookies.

  9. Bake at 325 degrees for 8 – 10 Minutes. Cool completely

  10. . In a small bowl combine frosting and confectioner sugar until smooth. Tint green.

  11. . Spread on cookie. Top with M&M.
