Chocolate Chocolate-Chip Muffins

Ingredients

  • 1 3/4 cups of all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 T unsweetened cocoa
  • 3/4 cups superfine sugar
  • 3/4 cups of semisweet chocolate chips
  • 1 cup milk
  • 1/3 cups plus 2 teaspoons vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 400 degrees and fill a muffin tray with paper cups. Measure out the dry ingredients into a large bowl. Pour all the liquid ingredients into a measuring cup. Mix both together…best muffins are lumpy. Sprinkle more chocolate cihps on top then cook for 20 minutes or until the muffins are dark, risen and springy.
