Hummus

Ingredients

  • • 2-16 oz. cans garbanzo beans, drained and rinsed
  • • 1 clove garlic, peeled
  • • 1/3 cup tahini (this is a sesame seed paste and can often be found by the peanut butter or organic section)
  • • 1 teaspoon salt
  • • Juice of 1 lemon
  • • 1/4 teaspoon cayenne pepper, ground
  • • 1/4 teaspoon cumin, ground
  • • 1/4 teaspoon black pepper, ground
  • • 1/3 cup extra virgin olive oil
  • • 1 handful parsley
  • • 3-4 green onions, cut into 1” pieces
  • • Water as needed (approx 1/3 cup)

Directions

  1. Place all ingredients in food processor or blender. Add water as needed to form a smooth paste. Adjust seasonings to taste.

  2. Garnish with parsley if desired. Serve with pita bread wedges, fresh veggies, or crackers!
