Whole Grain Pancakes

Pancake mix: Makes 4 ½ cups mix. (1 cup mix makes nine 4-inch pancakes).

Ingredients

  • • 2 cups whole wheat flour
  • • 1 cup corn meal
  • • 1 cup oat flour**
  • • 3 Tablespoons sugar
  • • 4 Tablespoons baking powder
  • • 2 teaspoon salt
  • Liquid ingredients:
  • • 1 egg
  • • 3/4 cup milk
  • • 2 Tablespoons canola oil
  • Optional add-ins (add with liquid ingredients):
  • • 1/2 cup blueberries, fresh or frozen (thawed and drained)
  • • 1/2 cup nuts, chopped
  • • 1/2 cup pumpkin, squash or sweet potato, mashed
  • • 1 apple, chopped small
  • • 1 banana, sliced

Directions

  1. Blend ingredients together. Store mix in an air-tight container.

  2. **Make oat flour by pulsing quick or old-fashioned oatmeal in the blender for a couple of minutes.

  3. To prepare pancakes:

  4. Heat the griddle. Add the liquid ingredients and mix until the dry ingredients are just moistened (for thinner pancakes add an extra ¼ cup milk). Grease heated griddle, if necessary.

  5. Pour ¼ cup of batter onto griddle. Cook pancakes until puffed and dry around edges. Turn and cook until other side is golden brown.
