Cinnamon Bread Pudding with Smoked Bacon

Ingredients

  • • 3 slices smoked bacon, diced
  • • 4 slices cinnamon swirl bread, small dice
  • • 3/4 cup egg substitute, beaten
  • • 1 1/2 cups fat-free half & half
  • • 1/3 cup brown sugar
  • • 3 Tablespoons butter, melted
  • • 1/5 teaspoon ground nutmeg
  • • 3/4 teaspoon ground cinnamon
  • • 1 teaspoon vanilla

Directions

  1. Sweat bacon over medium-high heat until crispy. Lay bacon onto paper towel lined plate or pan. Cool.

  2. Mix all ingredients gently, pressing liquid into cinnamon bread. Press into 8 X 13, or appropriate pan.

  3. Preheat water bath over medium-high heat. Pace ramekins into boiling water and cover until internal temperature of 165°F when top springs back slightly when pressed.
