Whole-Wheat Veggie Pizzas

Ingredients

  • 2 cups whole wheat flour
  • 2 cups all-purpose flour
  • 1/2 cups oats
  • 1 Tablespoon + 1 1/2 teaspoons active dry yeast
  • 1/4 teaspoon salt
  • 2 teaspoons honey
  • 1 1/2 cups warm water
  • 1 cup + 2 Tablespoons prepared pizza sauce
  • 2 teaspoons minced garlic
  • 1/4 cup fresh basil leaves
  • 1 1/2 cups spinach leaves
  • 1 cup + 2 Tablespoons broccoli florets
  • 1/2 cup + 1 Tablespoon carrots, grated
  • 1 cup + 2 Tablespoons green peppers, diced
  • 1 cup + 2 Tablespoons tomatoes, diced
  • 2 1/4 cups mozzarella cheese, part-skim

Directions

  1. To prepare the pizza dough: mix 1 cup each of the white and whole wheat flour, oats, yeast and salt. Set aside. Heat water to 125°F, then add the honey.

  2. Gradually add the water to the dry mixture. Mix for 2 minutes. Add the remaining flour, mixing well ager each addition.

  3. Knead the dough for 10 minutes. Spray with a baking spray; cover. Let the dough rise in a warm place until doubled. Punch down.

  4. Divide the dough into equal parts. Roll and place in a 7-inch pizza pans. Cover. Let the dough rise in a warm place for about 45 minutes.

  5. Mix the garlic and basil (trimmed and chopped) into the prepared pizza sauce. Top each dough round with 2 Tablespoons each of the pizza sauce, spinach leaves (stems trimmed), broccoli, carrots, green peppers, tomatoes, and cheese.

  6. Bake at 375°F until cheese melts.
