Fajitas

Serves 4 people

Ingredients

  • 1 medium onion
  • 1 medium green bell pepper cut into wedges
  • 4-6 chicken breasts
  • 1 small tomato cut into wedges
  • about 8 flour tortillas
  • optional: salsa, guacamole, sour cream, ranch

Directions

  1. Cook onion and bell pepper over medium-high heat until tender. Remove from skillet.

  2. In Same skillet, brown chicken. Stir in spices and seasonings and ¼ cup water. Bring to a boil; reduce heat to low. Cook uncovered 3-5 minutes, stirring occasionally.

  3. Return vegetables to skillet; heat 2 minutes. Stir in tomatoes.

  4. Place ¼-½ cup filling on each warmed tortilla. Fold and enjoy.
