Grown Up Mac N Cheese

Ingredients

  • 1 box Penne noodles (1 lb)
  • 3/4 lb Sharp cheddar
  • 1/2 lb Gruyere
  • 1/2 cup shredded asiago
  • 3 tbsp unsalted butter
  • 3 tbsp flour
  • 2 cups milk
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper

Directions

  1. Heat oven to 350 degrees

  2. Spray baking dish

  3. Boil noodles 6 minutes, drain.

  4. In large bowl, toss together shredded cheddar, gruyere and asiago. Set aside

  5. Melt butter in medium saucepan over medium heat. Whisk in flour until smooth. In thin stream, whisk in milk. Stir in onion powder, salt and cayenne. Boil over medium-high heat.

  6. Reduce heat, simmer 3 minutes. Remove from heat. Whisk in 2 1/2 cups of the cheese mixture.

  7. In pasta pot, stir together the pasta and cheese sauce. Pour half into casserole dish. Sprinkle with cheese. Spoon remaining in and top with remaining cheese.

  8. Bake 20 minutes
