Chewy Oatmeal Chocolate Chip Cookies

Variations: For wheat –free cookies, substitute 1 cup organic barley flour for whole wheat pastry flour. For lower fat cookies, use 3 tbsp organic canola oil and 3 tbsp organic applesauce. Substitute carob chips for chocolate chips, if desired.

Ingredients

  • 1 cup rolled oats
  • 3/4 cup chocolate chips (or mix and match different types of chips, dried fruit and nuts – total 3/4 cup)
  • 1 cup whole wheat pastry flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1/4 cup organic granulated sugar
  • 6 tbsp organic canola oil
  • 1/4 cup organic agave
  • 1/4 cup water
  • 1/2 tsp vanilla

Directions

  1. Preheat oven to 325

  2. Place first 6 ingredients in large mixing bowl.

  3. Place liquid ingredients in a small bowl and whisk to combine.

  4. Pour the wet ingredients into the dry ingredients and mix with a fork until combined.

  5. Drop 1 tbsp portions of batter onto a parchment-lined cookie sheet.

  6. Bake 8-10 minutes until lightly golden around the edges. Remove and set aside for 2 minutes.

  7. Transfer cookies to wire rack and allow to cool. Store in covered container.
