Cheese Puffs

These can be frozen and bagged for later use. Just thaw and fill. Recipe can be doubled or quadrupled.

  • 2 tbl. butter
  • 1 egg
  • 1/4 cup flour
  • 1/4 cup shredded cheese, Cheddar or Swiss


  1. Melt butter in 1/4 cup boiling water. Add flour and dash of salt, stir. Cook and stir until mixture forms a ball that doesn’t separate.

  2. Cool slightly. Add egg and beat until smooth. Stir in cheese.

  3. Drop onto greased baking sheet by tablespoons. Bake at 400 degrees for 20 minutes.

  4. Cool and split. Fill as desired.

  5. Makes 1 dozen.
