Julie’s Cheesecake

Ingredients

  • 1 package graham crackers
  • 1/4 cup sugar
  • 1/2 cup (1 stick) butter, melted
  • 3 8-oz. packages cream cheese, softened
  • 4 eggs
  • 1 cup sugar
  • 1 T vanilla extract
  • 1/2 cup sugar
  • 16 oz. sour cream
  • 1/2 t vanilla
  • 1/2 cup sugar

Directions

  1. To make the crust, crush the crackers in a food processor. Add the sugar and blend. Slowly add the butter until blended through. Press into the bottom of a 10-inch springform pan.

  2. To make the cake, process 1 package cream cheese and 1 egg in a clean food processor work bowl until smooth.

  3. Add another package of cream cheese and another egg and process until smooth.

  4. Add the last package of cream cheese and another egg and process until smooth.

  5. Scrape down the sides of the bowl. Add remaining egg, 1 c sugar and 1 T vanilla extract and process until blended and smooth.

  6. Scape down sides of bowl and process an additional 5-10 seconds, making sure there are no lumps in the batter.

  7. Pour over the crust and spread evenly.

  8. Bake for 50 minutes or until done.

  9. Whisk together the sour cream, 1/2 cup sugar and 1/2 t vanilla until smooth. Pour over the top of the cheesecake.

  10. Return to oven an additional 10 minutes.

  11. Remove from oven and cool on a wire rack. Cover with plastic wrap and refrigerate at least 4 hours.

  12. Just before serving, remove from the pan.
