Potato and Bacon Pie

Ingredients

  • 1 spray(s) cooking spray, or enough to coat pie dish
  • 4 large potato, red, white, peeled, and mashed or grated
  • 1/2 medium apple(s), peeled, cored and grated (use Granny Smith)
  • 8 slice(s) cooked crisp turkey bacon, diced
  • 1/2 cup(s) fat-free evaporated milk
  • 3 Tbsp grated Parmesan cheese
  • 1/8 tsp ground nutmeg
  • 1/8 tsp table salt, or to taste
  • 1/8 tsp black pepper, or to taste

Directions

  1. Preheat oven to 350°F. Coat a 9-inch pie dish with cooking spray.

  2. Stir together all ingredients. Spread in pie dish and smooth the top.

  3. Bake until nicely browned on top, about 35 to 40 minutes. Cool for 5 minutes before cutting into 8 wedges.
