Brie and Apple Stuffed French Toast

Ingredients

  • 3 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 12 slices day-old French bread
  • 8 ounces brie cheese, thinly sliced (outer coating removed)
  • 1 golden delicious apple, peeled and cut into 1/8-inch thick slices
  • butter

Directions

  1. In a pie pan or other shallow dish, whisk together the eggs, milk, vanilla, salt, and spices.

  2. Cover one side of 6 bread slices with brie and apple slices.

  3. Place remaining bread slices on top to form sandwiches; then press them together slightly to seal.

  4. Dip sandwiches in egg mixture for 30 seconds on each side.

  5. Melt some butter in a small frying pan over med-high heat.

  6. Cover and cook each sandwich for 2-3 minutes on each side, or until lightly browned.

  7. Serve hot with syrup.
