Brown Bag Special

Serves 4 people

Ingredients

  • 3 cups diced cooked chicken
  • 1 celery, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 4 green onions, including some tender green tops, finely chopped
  • 1/2 cup mayonnaise, plus extra for spreading on the bread
  • 1/4 teaspoon salt
  • fresh ground black pepper
  • 8 slices pumpernickel bread (or other brown bread)

Directions

  1. In a bowl, mix together all the ingredients except the bread; taste and adjust with salt and pepper.

  2. *Optional—spread mayonnaise on all of the bread (I don’t do this b/c I don’t like a lot of mayo).

  3. Divide mixture evenly between 4 slices; top with the remaining bread. 4 Eat whole or cut in half and serve.
