Healthy Snickerdoodles

Ingredients

  • 3/4 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 cup whole-wheat flour
  • 1/4 cup ground flaxseed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 cup sugar
  • 1 teaspoon ground cinnamon

Directions

  1. Heat oven to 375°F. Mix together brown sugar, butter and egg. Add whole-wheat flour, flaxseed, baking powder, baking soda and salt. Shape into 1-inch balls. Mix sugar and cinnamon. Roll dough balls in mixture and place 2 inches apart on cookie sheet. Bake 8 to 10 minutes or until set. Yields about 2 dozen cookies
