Potato-Egg Salad

Ingredients

  • 6 cups diced new potatoes
  • 1/3 cup Italian dressing
  • 1 teaspoon salt
  • 1 cup celery, diced
  • 1/3 cup sliced green onion
  • 4 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon dry mustard
  • 1/2 teaspoon horseradish

Directions

  1. Boil potatoes with skins on for 15 to 20 minutes, or until tender.

  2. Drain. Pour salad dressing of over warm potatoes.

  3. Chill for about 2 hours.

  4. Mix remaining ingredients and fold into potato mixture.

  5. Chill until ready to serve.
