caramelised red onion with pan-fried tofu

Ingredients

  • olive oil
  • 
1/2 red onion, peeled and sliced

  • 2 tbsp balsamic vinegar

  • 3 tbsp soft brown sugar
  • 1/2 packet tofu

  • large handful spinach leaves
  • 
salt and freshly ground black pepper

Directions

  1. For the onions, heat the oil in a non-stick frying pan. Add the onion and sauté for 1-2 minutes.

  2. Add the balsamic vinegar, sugar and honey.

  3. Reduce the heat to cook to onions gently for 5-6 minutes, stirring occasionally until caramelised.


  4. Meanwhile, for the tofu, heat the oil in a pan.

  5. Add the tofu and cook for 2-3 minutes on each side, until golden. 


  6. For the spinach, heat the oil in a pan. Add the spinach and salt and freshly ground black pepper, stirring well until wilted down.


  7. To serve, transfer the cooked spinach to the centre of a warm plate. Top with the tofu and then spoon over the caramelised onions.
