Mandarin, Pecan, Almond & Cranberry Spinach Salad

Ingredients

  • 6-8 cups raw spinach, washed and dried
  • 1 small can Mandarin oranges, drained
  • 3/4 cup chopped pecans, toasted
  • 1/4 cup slivered almonds (optional), toasted
  • 1-1.25 cup cherry tomatoes, washed and cut in halves
  • 1/4 cup sunflower seeds
  • 1/2 cup dried cranberries
  • Better than Bottled Balsamic Vinaigrette (double the recipe)

Directions

  1. Wash and dry spinach and place in a large salad bowl.

  2. Chop all tomatoes and nuts and toss into bowl.

  3. In a small dish mix the salad dressing.

  4. Pour over salad and mix well.

  5. Serves 6 as a side dish.
