Pina Colada Cheesecake

Ingredients

  • Cheesecake ingredients:
  • 1 1/4 cup canned pineapple (in its own juice)
  • 1 cup raw cashews
  • 4 oz melted coconut coconut butter
  • 1/8 cup agave nectar
  • 1 tablespoon pineapple juice
  • 1 1/2 teaspoon vanilla extract
  • Crust ingredients:
  • 1 cup raw almonds
  • 4 pitted dates
  • 1/2 teaspoon vanilla
  • pinch of salt
  • cinnamon to taste
  • Approx 1 tablespoon flax seed oil

Directions

  1. For cheesecake ingredients:

  2. Blend all of the ingredients in a vita mix or high speed blender until completely smooth.

  3. For more texture, add around 1/2 more pineapple after the mixture is blended.

  4. For crust ingredients:

  5. Grind nuts in a food processor until finely chopped, add rest of ingredients, and blend well. Press into the bottom of a pie plate to form shell.

  6. Pour filling into crust and refrigerate until firm. (put in freezer to chill quicker.)
