Potato Salad

Ingredients

  • 2 # small all-purpose white or red potatoes
  • 3 Tbsp white vinegar
  • 1 Tbsp canola oil
  • 1/2 cup chopped celery
  • 1/2 cup finely chopped red onions
  • 2 Tbsp sweet pickle relish, drained
  • 3 hard-cooked large eggs, chopped
  • 3/4 cup low-fat mayo
  • 2 Tbsp prepared mustard
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper

Directions

  1. Boil potatoes approximately 10 minutes or until tender

  2. Drain

  3. Cool and peel

  4. Cut potatoes into 1/2 ince cubes.

  5. Sprinkle with vinegar and oil.

  6. Add celery, onion, relish, and eggs;

  7. Toss gently

  8. Combine mayo, mustard, salt, and pepper.

  9. Spool over mayonnaise mixture over potato mixture. Toss gently

  10. Cover and chill 1-24 hours.
