Chocolate Angel Food Cake

Ingredients

  • 3/4 c., 2 T. flour, sifted
  • 1/4 c. cocoa
  • 1/2 c. sugar, sifted
  • 12 eggs, whites only
  • 1/4 tsp. salt
  • 1-1/4 tsp. cream of tartar
  • 1 c. sugar, sifted
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract

Directions

  1. Sift flour with 1/2 c. sugar and cocoa 4 times. Beat egg whites and salt until foamy. Sprinkle in cream of tartar and beat until stiff peaks form. Add remaining cup of sugar to egg whites in 4 additions, beating after each. Add flavoring. Beat well. Add flour, folding in 15 complete folding strokes. Sift flour and sugar mixture over egg whites. Beat well. Bake at 375° for 35 minutes. Cool completely over a pop bottle.
