tuscany rice and bean soup

Ingredients

  • 8oz italian sausage
  • 3 16oz can low sodium chicken broth
  • 1 28oz can diced tomatoes
  • 1/2 tsp salt
  • 1/4 black pep
  • 1/4 tasp dried oregano
  • 1 cup uncooked rice 1 15.5oz can great northern bean undrained

Directions

  1. brown sausage in a 3-4 qt sauce pan over med-hgih heat, about six min, drain and discard grease

  2. stir in broth, tomatoes, salt, pep, and oregano, bring to a boil

  3. stir in rice and bean

  4. cover and reduce heat to a simmer

  5. let simmer for 15-20 min or until rice is cooked

  6. serve hot
