Spring rolls in thai dipping sauce

Ingredients

  • 6 spring roll wrappers
  • 12 medium shrimp, cooked and peeled
  • 1 cup lettuce, shredded
  • 1/3 cup cilantro
  • 1/2 cup cucumber, peeled and seeded
  • 1 carrot, julienned
  • Dipping Sauce:
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 3 tablespoons mirin or rice wine
  • 1/4 teaspoon ginger (optional)

Directions

  1. soak a wrapper until limp

  2. lay out flat

  3. add 1/6 of ingredients down the middle with lettuce first

  4. fold over each end, then roll like a burrito

  5. Moisten seam and press close, slice in 2

  6. Repeat
