Fruity Couscous Salad

Ingredients

  • 4 cups couscous, cooked (1 1/3 cups dry)
  • 2/3 cup slivered almonds
  • 1/2 cup apricots, dried and chopped
  • 2/3 cup craisins or raisins, micro with 1/3 cup water for 1-2 min to soften
  • 1 tsp cumin
  • 3 scallions, thinly sliced with green tops
  • salt and pepper

Directions

  1. Prepare couscous.

  2. Combine all ingredients, serve at room temp or chilled.
