Cheesy Apple Bacon Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1/4 . sugar
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup milk
  • 1/3 cup melted butter
  • 1 egg, beaten
  • 1/2 cup chopped unpeeled apple (Granny Smith)
  • 3/4 cup shredded sharp cheddar cheese (or extra-sharp)
  • 2/3 cup crumbled crisp cooked bacon

Directions

  1. Preheat oven to 400° and grease muffin pan.

  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt; stir to blend.

  3. In another mixing bowl, combine the milk, butter, and egg; mix well.

  4. Add egg mixture to flour mixture; stir just until blended.

  5. Gently fold in apples, cheese, and bacon.

  6. Spoon batter into prepared muffin tin, dividing evenly.

  7. Bake for 15-20 minutes or until browned.
