Cheesy Noodles and Mushrooms

Ingredients

  • 1 lb fresh mushrooms, sliced
  • 1/4 cup melted butter or 1/4 cup margarine
  • 1/2 cup chopped onion
  • 1/4 cup sliced green onion
  • 1 (8 ounce) package medium egg noodles
  • 2 cups shredded cheddar cheese
  • 1/2 cup half-and-half cream
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup chopped parsley

Directions

  1. Saute mushrooms in butter until tender. 2 Add onion and green onion; cook 2 minutes; set aside.

  2. Cook noodles according to package directions; drain and return immediately to saucepan.

  3. Add remaining ingredients except sauteed vegetables and parsley; cook over low heat until cheese melts, stirring constantly.

  4. Add sauteed vegetables, stirring gently.

  5. Sprinkle with parsley, and serve immediately.
