Chicken Salad with Oranges and Pistachios

Ingredients

  • 2 1/2 lbs rotisserie chicken, roughly chopped to 3 cups
  • 2 oranges, peeled and sectioned
  • 1 tbsp red onion, finely chopped
  • 1 tbsp olive oil
  • 1 tbsp sherry vinegar
  • salt and pepper
  • 4 cups romaine lettuce, chopped
  • 1/4 cup pistachios, toasted and roughly chopped

Directions

  1. Combine chicken, oranges, onion, oil, vinegar, salt and pepper in bowl, set aside 5-10 min.

  2. Add greens and pistachios and toss gently.
