Beef with tomatoes and olives over Pasta

Ingredients

  • 1 onion, sliced
  • 8 oz beef, top round, cut 1/2 in cubes
  • 1/4 cup dry white wine
  • 1/2 cup water
  • 1 1/2 cups tomatoes, chopped or canned
  • 1/3 cup olives
  • 2 tbsp basil
  • 1/4 tsp salt
  • 1/4 cup yogurt
  • 7 oz rotini pasta
  • 1 tbsp olive oil

Directions

  1. Preheat oven to 375

  2. Heat ovenproof skillet over medium heat.

  3. Spray with cooking spray and cook onion 5 minutes. Add beef and cook until browned, about 10 minutes, stirring.

  4. Add wine, water, tomatoes, and olives to skillet. Bring to a boil and cover. Put in oven for 1 hour Remove skillet from oven and stir in the basil, 1/8 tsp salt, and yogurt.

  5. Cook pasta according to package, toss with oil and 1/8 tsp salt.

  6. Mix pasta with beef and serve.
