Baked Pork Tenderloin

Ingredients

  • 4 garlic cloves, minced
  • 1 tbsp olive oil
  • 2 tbsp chili powder
  • 2 tbsp brown sugar
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp cinnamon
  • 1/2 tsp cocoa powder, unsweetened
  • 1/4 tsp salt
  • 1 lb pork tenderloin

Directions

  1. Combine garlic, oil, chili powder, sugar, cumin, oregano, cinnamon, cocoa, and salt in food processor until is becomes a paste

  2. Rub the pork with the mixture and allow to marinate at room temp for 1 hour or in frigde for up to 24 hours.

  3. Preheat over to 375

  4. ace in baking pan and bake for 10-25 minutes, or until the internal temp is 140. Let rest for 10 minutes before slicing.
