Confetti Couscous

Ingredients

  • Couscous:
  • 1 tsp olive oil
  • 1/4 cup yellow onion
  • 1 1/2 cup chicken broth
  • 1 cup whole wheat couscous, dry
  • Dressing:
  • 1 tbsp OJ
  • 1 1/2 tsp lemon juice
  • 1 1/2 tsp Dijon Mustard
  • 2 tbsp olive oil
  • Confetti salad:
  • 1/2 cup dried berries
  • 1 tbsp pistachios, chopped
  • 1 tbsp basil
  • 1 tbsp mint
  • 1 tbsp grated orange peel
  • salt and pepper

Directions

  1. in 1-qt saucepan, heat 1 tsp olive oil over med-high heat.

  2. Add onion and cook for 3 minutes, add broth and bring to a boil, add couscous, stir , cover and remove from heat.

  3. Let stand covered 5 minutes, transfer to mixing bowl

  4. In a small bowl, whisk OJ, lemon juice and mustard, add 2 tbsp oil

  5. Add everything together, mix well
