Sweet Potato or Pumpkin Waffles

Ingredients

  • 1/3 cup sweet potato, cooked, peeled and pureed or 1/4 cup pumpkin puree
  • 3/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/4 cup cornmeal
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp cinnamon
  • 1/8 tsp ginger
  • 1 cup milk
  • 2 tbsp olive oil
  • 1 egg white
  • Blueberry syrup:
  • 1 1/2 cups blueberries
  • 2 tbsp water (if using fresh berries)
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 3 tbsp light molasses
  • pinch of cloves

Directions

  1. For syrup, combine ingredients in saucepan, bring to boil over med-high heat, then reduce to low, cover and simmer until bettires burst and juices are slightly thickened (about 5 minutes)

  2. Set aside and keep warm

  3. Add flour ingredients, and other separate and then stir until just combined.

  4. on high beat the egg white until stiff peaks form, gently whisk 1/3 of egg white into batter, then using rubber spatula fold rest of egg white into the batter.

  5. Spoon onto waffle iron
