fluffy High-Fiber Pancakes

Ingredients

  • 1 cup buttermilk
  • 1/2 cup quick-cooking rolled oats
  • 2/3 cup bran (wheat bran)
  • 1 large egg
  • 1/4 cup whole wheat flour
  • 2 tsp sugar
  • 3/4 tsp baking soda
  • 1/4 tsp salt

Directions

  1. Combine milk, oats and bran in large bowl, let stand 5 minutes. Add egg and beat until blended.

  2. Mix folur, sugar, soda and salt in small bowl until blended. Add it to the bran mixture and blend until just moistened.

  3. Prepare a skillet with non-stick spray and cook about 3 minutes per side.
