Breakfast “sweet” potatoes

Ingredients

  • 1 lb sweet potatoes, peeled and cut into 1/2 in cubes
  • 1/2 cup bell pepper
  • 3/4 cup onion
  • 1 1 /2 tsp garlic, minced
  • 1 1 /2 tsp olive oil
  • 1/4 tsp paprika
  • red pepper flakes
  • salt and pepper

Directions

  1. Preheat oven to 400, line baking sheet with parchment paper or use non-stick

  2. Combine ingredients and toss well to combine.

  3. Transfer to baking sheet and arrange in single layer

  4. Bake 20 minutes, turn potato pieces and bake 20 min longer or until they are tender and onion lightly browned.

  5. Season with salt and pepper
