AEBLESKIVER

Requires sprecial pan which is easy to find on the web; sometimes in stores that sell cast iron or nordic cookware.

Serves 4 people

Ingredients

  • 3 eggs, separated
  • 2 teaspoons sugar
  • 1/2 teaspoon salt (optional)
  • 2 cups buttermilk
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cardamom (optional)
  • 6 Tablespoons butter
  • 6 Tablespoons vegetable oil

Directions

  1. Separate the eggs. Beat the egg yolks. Add sugar, optional salt, and buttermilk and mix.

  2. Sift the flour, baking soda, baking powder and optional cardamom together and mix with the egg mixture.

  3. Beat the egg whites until stiff and fold into the batter.

  4. Melt the butter and oil together.

  5. Heat the pan and place about one teaspoon of the butter and oil mixture in each well.

  6. Fill each well with batter and cook until the bottom half is well formed and brown. Turn and brown on the other side. For the first batch or two pull an aebleskiver apart to make sure it is done in the middle.

  7. Traditionally served with powdered sugar and lemon. Good with maple surup and fruit.
