Fruit and cheese-stuffed French Toast

Ingredients

  • 2 tbsp cream cheese, light, softened
  • 4 slices whole-wheat bread
  • 2 tbsp fruit spread
  • 1 egg
  • 2 egg whites
  • 3 tbsp milk
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • nutmeg, pinch
  • 1 cup strawberries, hulled and sliced

Directions

  1. Spread cream cheese evenly on 2 slices of bread, leaving 1/8 in border. Spread the spread on remaining slices of bread, leaving 1/8 in border. Put slices of bread together to make 2 cream cheese-fruit sandwiches. Cut each sandwich in half on the diagonal; set aside.

  2. Beat the egg and egg whites in a large shallow bowl or pie plate; whisk in the milk, vanilla, cinnamon, and nutmeg. Add 2 sandwich halves to the egg mixture;let stand until evenly soaked, about 20 seconds on each side. Repeat with the remaining 2 sandwich halves.

  3. Spray a large nonstick skillet with nonstick spray and set over med-high heat. Add the sandwiches to the skillet and cook until browned, 2-3 minutes on each side. Serve with the berries.
