CHICKEN-Apple Chicken

Serve with baked potatoes, baked butternut squash, steamed broccoli, and a green salad.

Serves 6 people

Ingredients

  • 6 chicken breasts, boneless, skinless, cubed
  • 1 1/4 tsp vegetable oil
  • 4 apples, Granny Smith, in 1/2 inch wedges
  • 1 1/2 cups chicken broth, divided
  • 1/3 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 3 T corn starch
  • 2 T worcestershire sauce
  • salt and pepper, to taste

Directions

  1. Heat oil in large skillet. Add chicken and brown.

  2. Add apple slices, sauté 3 minutes, stirring occasionally.

  3. Add 3/4 cup chicken broth, reduce heat, cover and simmer 10 minutes.

  4. Mix remaining ingredients together, then add.

  5. Cook over medium heat, stirring constantly til sauce thickens.
