Savory Cheese Muffins With Bacon and Chives

Ingredients

  • 4 slices bacon, thick sliced
  • 2 tablespoons butter
  • 1/4 cup minced fresh chives
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 2 eggs
  • 1 cup milk
  • 1 cup cheddar cheese, shredded

Directions

  1. Cook bacon until crisp.

  2. Cool and crumble.

  3. Set aside.

  4. eheat oven to 350.

  5. Prepare muffin tin by spraying with vegetable oil spray.

  6. Melt butter over medium heat in a small skillet.

  7. Remove from heat and add chives.

  8. Cool to room temperature.

  9. In a medium bowl combine eggs and milk using a whisk.

  10. Add butter/chive mixture, cheese and crumbled bacon.

  11. In a small bowl, combine flour, baking powder, salt and sugar.

  12. Stir to mix.

  13. Add to egg mixture, stirring only until blended thorougly.

  14. Spoon mixture into prepared muffin cups, filling about 2/3 full.

  15. (An ice cream scooper is a great tool for this purpose.) Bake 20- 25 minutes, or until muffin tops just begin to brown.

  16. Remove from oven and remove muffins from tin.

  17. Cool them on a wire rack.
