Thai Coconut Chicken

Ingredients

  • 1 pound cut up raw chicken
  • Olive oil for sautéing chicken
  • 2 tablespoons minced garlic
  • 2 tablespoons fresh grated Ginger
  • Zest of one lime
  • 1-2 finely chopped serrano chilies or a jalapeno
  • 1 can coconut milk
  • 1 green pepper, cubed
  • 2 cups sugar snap peas
  • 1/2 cup chopped cilantro
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • Jasmine Rice

Directions

  1. Cook chicken with garlic, Ginger, lime, and chilies.

  2. Add in the remaining ingredients (except the cilantro) and cook for an additional 15-20 minutes. Add in the cilantro the last 5 minutes. Serve over jasmine rice.
