Poppy Seed Chicken

Ingredients

  • 4-5 chicken breasts. Fresh or frozen
  • 1 can chicken broth or bouillon paste
  • Salt and pepper to taste
  • Onion powder
  • Base
  • 1 can cream of chicken soup
  • Equal parts sour cream
  • Topping
  • 1 package ritz crackers
  • 3/4 cup butter
  • 2 tablespoons poppy seed chicken
  • Your favorite rice (I use jasmine)

Directions

  1. Cook the chicken in a crockpot in the morning. Dump in a can of chicken broth or some other source of flavor. Water can also be used, but the flavor isn’t as good. Add in salt, pepper, and onion powder (optional). Cook on low for 8 hours.

  2. Shred the chicken with a fork and mix with cream of chicken soup and sour cream. Dump into a baking dish. Preheat oven to 375.

  3. Melt the butter in the microwave. Crush the ritz crackers in the package. Mix finely crushed crackers with melted butter and poppy seeds and apply a layer over the chicken in the baking dish. Cover with foil and bake for 30 minutes. It should bubble when it’s done. Remove foil for last 5 minutes to brown the crackers. Serve over rice after letting it set up for 5 minutes. Tastes even better the next day!

  4. To make it lower calorie, use low fat cream of chicken and light sour cream.
