Glazed Veal Chops

For a side dish, seve Brussels Sprout Rounds, Orange-Juice Steamed Carrots, or Aromatic Rice with Vegetables

Prep time: 20 minutes
Serves 4 people

Ingredients

  • 1 tablespoon olive oil
  • 4 veal loin or rib chops, 1 inch thick
  • chicken broth
  • 4 teaspoons prepared pesto
  • Salt and freshly ground black pepper

Directions

  1. Heat the olive oil in a large skillet over high heat. Add the veal chops and saute’ until golden brown, about 3 minutes per side. Reduce the heat to low and continue to cook turning the veal chops frequently, until they’re brown on the outside and cooked through about 10 minutes more. Remove the veal chops to dinner plates and keep warm.

  2. Add the white wine and pesto to the skillet. Boil the liquid over high heat until only a syrupy glaze remains, about 1 minute.Season to taste with salt and pepper, spoon the glaze over the chops, and serve immediately.
