Nanny’s Bourbon-Baked Beans (Rachael Ray)

Ingredients

  • 1/4 lb bacon, chopped
  • 1 medium onion, chopped
  • 2 tablespoons Dijon mustard
  • 3 tablespoons dark molasses
  • 2 tablespoons dark brown sugar
  • 1 (8 ounce) jar mango chutney (any large chunks, chopped)
  • 6 (15 1/2 ounce) cans white beans, drained & rinsed
  • black pepper, to taste
  • 1/4 cup bourbon

Directions

  1. Preheat oven to 375°F.

  2. Heat a large skillet over medium heat and cook bacon until fat begins to render out.

  3. Add onion and cook 1 minute.

  4. Add mustard, molasses, sugar and chutney and heat through.

  5. Add pepper to taste.

  6. Stir in beans then pour mixture into a large, lightly greased baking dish.

  7. Bake 30 minutes covered.

  8. Remove from oven and stir in bourbon.

  9. Bake uncovered 15-20 minutes longer until beans are bubbly and thick.
