Hamburger Barley Vegetable Soup

Everyone loves this soup – it makes a huge pot, freezes will.

Serves 10 people

Ingredients

  • 1 1/2 lbs. ground beef
  • 6 cups water (can mix beef broth and water)
  • 2 cups carrots, sliced
  • 1 1/2 cups onions, coarsely chopped
  • 1 1/2 cups celery, coarsely chopped
  • 1/2 cup green pepper, coarsely chopped
  • 1/2 cup barley
  • 2 bay leaves
  • 1 - 28 oz can tomatoes
  • 1 - 8 oz can tomato sauce
  • salt and pepper to taste

Directions

  1. Brown beef, drain well. Put in large pot. Saute carrots, onions, celery, green pepper for more flavor, then add to soup pot. Add barley and water/broth and tomatoes. Bring to a boil, reduce heat, cover simmer one hour or until vegetables and barley are tender.
