Hearty Crab Soup

Serves 4 people

Ingredients

  • 1 cup carrots, diced
  • 1 cup onion, chopped
  • 1 1/2 cups potatoes, diced
  • 3/4 cups celery, chopped
  • olive oil, several turns of the pot
  • 1 tables old bay seasoning
  • 1 tables worcestershire
  • 1 16 oz can tomatoes, chopped
  • 4 cups cold water
  • 1 pound crabmeat
  • parsley
  • 1 tables flour (mix with 1/3 cup water to thicken)

Directions

  1. In large pot, saute vegetables for flavor. Add all other ingredients except crab. Bring to boil, simmer 1 hour. Thicken with flour mixture; add crabmeat. Simmer 1/2 hour.
