Moroccan Chicken and Orzo

Ingredients

  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp saffron threads
  • 1/8 tsp ground cinnamon
  • 1 clove minced garlic
  • 4 skinless boneless chicken breasts, cut into 1 inch pieces
  • 1 Tbsp olive oil
  • 1 cup chopped onion
  • 1 cup chicken broth
  • 1/4 cup golden raisins (optional)
  • 1 cup orzo, uncooked
  • 1/4 cup chopped fresh cilantro

Directions

  1. combine first 6 ingredients in a bowl, add chicken and toss to coat.

  2. Add oil to large skillet, cook onion on medium heat until tender.

  3. Add chicken mixture to pan, cook until chicken is browned, stirring frequently.

  4. Add broth and raisins, reduce heat and simmer for about 5 minutes.

  5. Cook orzo according to package directions, and drain.

  6. Add orzo to skillet, mix everything together and heat.

  7. Sprinkle with chopped cilantro and serve.
