Breakfast Beans

This recipe calls for black beans but you can use pinto, red or white. For a hearty breakfast, top with eggs, and serve with a roasted tomato, sweet potato fries and bacon.

Ingredients

  • 1 Tbsp olive oil
  • 1 clove garlic or shallot, minced
  • 1 onion, chopped
  • 1/2 tsp cumin
  • 1/2 tsp dried oregano
  • pinch cayenne pepper
  • 1/2 tsp salt, to taste
  • 1 jalapeno, seeded and minced
  • 2 cups cooked black beans or 1 (15 oz) can, drained and rinsed
  • 1 to 3 Tbsp water
  • lime wedges, for garnish
  • chopped cilantro or parsley, for garnish

Directions

  1. Heat oil in a large skillet over medium high heat. Add garlic and onion and saute until softened, about 3 minutes.

  2. Add spices and jalapeno and continue to cook for an additional 3 minutes.

  3. Add beans and water, 1 Tbsp at a time, stirring until mixture is desired consistency. Let simmer for 5 minutes until beans are thoroughly heated. Taste and adjust seasoning.

  4. Serve hot with a squeeze of fresh lime juice and chopped cilantro.
