Pasta with Roasted Tomatillos and Chicken or Salmon

Ingredients

  • 12 oz pasta (fusilli or shells) reserving 1/4 cup of cooking liquid
  • 1 recipe Roasted Tomatillo Salsa
  • 2 cups coarsely chopped cooked chicken or smoked salmon
  • 1 cup of Queso Anejo or Parmesan
  • chopped cilantro
  • 1 lime, quartered
  • Put on a pot of water to boil, then make the salsa, without letting the ingredients cool. Boil pasta in salted water until al dente. Drain, reserving 1/4 cup of the cooking liquid. Return the pasta to the pot, and add the salsa, the reserved liquid and ch
