White Rice Pilaf

Ingredients

  • 1 1/2 Tbsp vegetable oil or olive oil
  • 1 1/2 cups medium grain white rice
  • 1 small white onion, chopped into 1/4" pieces
  • 2 cloves garlic, peeled and finely chopped or crushed through a garlic press
  • 1 3/4 cups chicken broth
  • 1 tsp salt
  • 3 Tbsp coarsely chopped flat leaf parsley, for garnish

Directions

  1. Add the oil to a saucepan over medium heat and saute the rice and onion. Stir frequently until the grains are translucent to milky white, about 5 minutes. Add the garlic and stir a few seconds, until fragrant. Scrape it into a rice cooker, add the remaining ingredients and let the cooker do the rest – no need for an oven

  2. Poblano rice with herbs: Add 2 roasted poblanos, peeled seeded and chopped and add 1 tsp fresh thyme or marjoram or crumbled dried oregano. Add them during the last few minutes of cooking.
