Wilted Spinach with Mustard Seeds

Ingredients

  • 3 Tbsp vegetable oil
  • 1 large onion, peeled and finely chopped
  • 1 garlic clove, peeled and finely grated
  • 3/4" piece of fresh ginger, peeled and finely grated
  • 1/2 tsp garam masala
  • 1 tsp brown or black mustard seeds
  • 14 oz spinach leaves, washed
  • sea salt and black pepper

Directions

  1. Heat the oil in a large pan and cook the onion, garlic, and ginger for 3 to 4 minutes until the onion begins to soften. Stir in the garam masala and mustard seeds and toast the spices of a minute until fragrant. The mustard seeds may pop and jump out of the pan when heated; if so cover with a lid for a few seconds.

  2. Throw in the spinach leaves an large handful at a time and stir quickly until the leaves begin to wilt. Season with salt and pepper to taste and serve.
