Pinto Beans

Lighter Version: Omit the lard and the salt. Increase the oregano by 1 teaspoon and the garlic by 2 cloves. Add 2 teaspoons vinegar.

Ingredients

  • 1 pound Pinto Beans, soaked
  • 8 cups water
  • 2 Tbsp lard, bacon drippings, olive oil
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 teaspoons salt
  • 1 dried chile

Directions

  1. Boil the beans in the water for 1 hour, until they begin to become tender.

  2. Heat the drippings or lard in a saute pan and saute the chopped onion and garlic. Add the beans along with remaining ingredients.

  3. Simmer for another 1/2 hour, until the beans are at your desired tenderness.
