Swiss Chard Tacos with Caramelized Onion

Ingredients

  • 1 (12 oz) bunch Swiss chard, or any other green of your choice (if you decide to use spinach, use a bit less)
  • 1 1/2 Tbsp bacon drippings, (remove the bits that are left over and reserve for a topping, if desired)
  • 1 medium yellow onion, sliced 1/4" thick
  • 3 cloves garlic, peeled and finely chopped
  • 1/2 to 1 tsp red pepper flakes
  • 1/2 cup water or broth
  • 1/2 tsp salt, to taste
  • 12 warm corn tortillas
  • 1/2 cup (4 oz) Manchego or queso fresca cheese

Directions

  1. Cut the greens crosswise into 1/2" slices, (spinach can be left whole). In a very large skillet, heat the oil or fat over med-high heat. Add the onion and cook, stirring frequently, until golden brown but still crunchy, about 4-5 minutes. Add the garlic and red pepper and stir for a few seconds, until aromatic, the add the broth or water, salt and the greens. Reduce the heat to med-low and cover and cook until the greens are almost tender, about 5 minutes.

  2. Uncover the pan, raise the heat to medium-high and cook, stirring continually, until the mixture is nearly dry. Taste and season with additional salt it you think necessary.

  3. Serve with the warm tortillas, topped with cheese.
